What is a cold room?
A cold room is a thermally insulated enclosure fitted with a refrigeration system, designed to store goods at a controlled temperature. There are two families, defined by the target range.
Positive cold rooms hold a temperature between 0 °C and +8 °C. They store fresh produce: fruit and vegetables, dairy, fresh meat and fish, flowers, pharmaceuticals. Negative cold rooms run between −18 °C and −25 °C for frozen goods, paired where needed with a blast-freezing tunnel.
The choice is not only about temperature: it drives insulation thickness, refrigeration capacity, floor treatment and the defrost method.
Positive or negative: how to choose
If your products are sold fresh and turn over quickly, a positive room is enough. If you store frozen goods or freeze them yourself, you need a negative room — with higher running costs that are best anticipated at the study stage.

How is your cold room sized?
Sizing rests on a thermal load calculation: the amount of heat to remove in order to hold the setpoint.
- The volume of the enclosure and its geometry
- The nature of the goods, their entry temperature and specific heat
- Daily turnover: how much product moves in and out
- Door opening frequency and how the room is operated
- Insulation: panel thickness, joints and thermal bridges
- Internal gains: lighting, fans, occupancy
- Outside conditions, decisive in Morocco during hot weather
Undersizing means a plant running continuously without reaching setpoint: accelerated wear and stock at risk. Oversizing means short cycles, unstable control and a needlessly high electricity bill for fifteen years.

The cold chain is a regulated food-safety matter. In food processing, HACCP principles require temperature control, recording and traceability of readings. A compliant cold room must let you demonstrate that the temperature was held, not merely hold it.

Positive between 0 °C and +8 °C for fresh produce, negative between −18 °C and −25 °C for frozen goods. If you freeze at the end of production, a blast-freezing tunnel should also be considered.
What volume should I plan for?
It depends on the tonnage to store, the storage method — pallets, racking, bulk — and the circulation space needed. Usable volume is always less than gross volume: the site visit allows it to be calculated precisely.
How long does installation take?
From a few days for a modular room to several weeks for a refrigerated warehouse. The timeline is confirmed after the study.
Do you provide HACCP documentation?
We provide the technical elements your file requires: commissioning readings, drawings, datasheets and the service record. The HACCP process itself is yours to run, but the installation must let you document it.
